Chicken & Mushroom Soup

 This light breakfast is always my two boys' favourite and Liana's too: Chicken & Mushroom Soup served with Garlic Bread and Fried Sausages (no sausage allowed for Liana). This time I tried adding blended potato into the soup (idea from Chikmi) but still retaining my original recipe. You can check out her method by clicking the link.

Serves: 5-6 persons
INGREDIENTS:
1/2 Chicken Breast*
1 can Button Mushroom* (* chopped to tiny bits) 
1/2 Big Onion - chopped 
1-2 tbsp Butter
2 tbsp Flour
2 Potatoes - boiled & blender with 2 cups water 
1 cup Fresh Milk (add more milk if you like creamier) 
2 cup Water
Salt & Pepper

METHOD:
1. Melt butter in a saucepan.
Sautee onion, add flour, stir quickly &  add milk.
Stir until smooth & not lumpy.
Add in the rest of ingredients.
Stir constantly until boiled to avoid lumpy.

2. Serve with garlic bread, etcs.
 
BAHASA MALAYSIA VERSION

SUP AYAM & CENDAWAN 
 
Hidangan: 5-6 persons
BAHAN2:
1/2 Dada Ayam*
1 tin Cendawan Butang* (* cincang halus) 
1/2 biji Bwg Besar - cincang
1-2 sb Butter
2 sb Tepung Gandum
2 biji Kentang - rebus & blender dgn 2 cwn Air
1 cwn Susu Segar (bubuh lebih kalau nak lebih lemak) 
2 cwn Air
Garam & Lada Hitam Serbuk

CARA2:
1. Cairkan butter dlm periuk.
Masukkan bwg & biar layu sedikit & masukkan tpg & kacau cepat.
Masukkan susu & kacau supaya tidak bergentel.
Masukkan kesemua bhn2 yg lain.
Kacau tanpa henti sehingga sup menggelegak.

2. Hidangkan dgn roti bawang putih & lain2 pilihan.

Deep Fried Salmon & Hasselback Potatoes

 Our dinner set tonight: Mushroom Soup, Baked Garlic Bread, Deep Fried Salmon in Breadcrumbs, Hasselback Potatoes and Salad with Balsamic Sauce.
DEEP FRIED SALMON IN BREADCRUMBS:
1. Rub Salmon with Salt & Pepper. Marinate with Mango juice.
2. Coat Salmon in Cornflour, dip in beaten egg, roll in breadcrumbs & deep fry.
HASSELBACK POTATOES

INGREDIENTS:
3 cloves garlic - pound 
3 tbsb Butter
A pinch of Salt
Freshly Ground Black Pepper

METHOD:
1. Wash potatoes thoroughly. Trim one side of potato to a leveled surface (flat) for ease of cutting later.
On a chopping board, with the trimmed flat side down, start from middle of the potato, cut almost all the way through, but being careful not to actually cut through.
I used a pair of chopstick (Deliah used forks) as stop-gap/leverage to maintain the consistencies and pattern of the slices.

2. Arrange the processed potatoes in a greased baking tray and insert the pounded garlic in between the slits.
Brush some butter on top of each potato, then sprinkle some salt and some freshly ground black pepper.

3. Bake potatoes at 200C for about 40-50 minutes until the potatoes turn crispy.
You may serve this with sprinkles of cheese or sour cream.

Spiral Potato

 Tried Spiral Potato to accompany our breakfast today: Spiral Potato, Baked Beans, Half-boiled Eggs and Toasted Bread (actually I also made baked tomato but forgot to snap it). The Spiral Potato turns out crispy and kids love it. We actually had this once the last time when we visited Taiping (sold at Pasar Malam).

METHOD: Poke a potato with a stick & slice thru in spiral. Move the spiral slightly apart. Sprinkle wth salt & pepper & deep fry.

Fish & Chips

 I still have many kilogram of the huge Tuna that I bought recently sitting in my freezer - Fish & Chips will be a quick way to finish them. I made the potato chips from scratch which were nicer than frozen ones from the supermarket. The whole family enjoyed it so much that all gave me thumbs up.

Makes 5 pax
INGREDIENTS:
5 pieces Fish Fillet
5 tbsp Tapioca flour
2 Egg Whites
A plate of Breadcrumbs
Salt & Pepper

METHOD:
1.Rub fillet with salt & pepper.
Coat thoroughly with tapioca flour.
Dip in egg white & roll onto a plate of breadcrumbs.

2. Deep fry fish fillet in a flat frying pan.
Fry until golden & cooked. Flip one.

3. Served with potato chips, salad, lemon slice & tartar sauce.


MAKING POTATO CHIPS:
1. Peel, wash & cut the potatoes.
2. Boil until 3/4 cooked & drain.
3. Add pepper & salt and deep fry.

Below is how I sliced the Tuna - lengthwise and the three pieces weighted about 1.5kg, enough to serve 5 pax. It has very thick skin which I removed & reserve it for something else (am thinking to make crispy fish skin with chilies... I'll share after I make it later).

Grill Black Pepper Steak

 I had fresh beef from the mosque for my share of Qurban this year. In fact we had three portions, two qurbans (mine & hubby's) and Liana's aqiqah. My hubby picked it up from the mosque just few hours after the cow was slaughtered so the beef was really fresh and sweet. 

I saw Nor (Tganu) making baked black pepper beef from her qurban meat and that gave me an idea to do the same. I gave a kg of the beef to my friend Hatta and he told me that he made pan-grill steak. So I decided to do something along those ideas.

I made two portions, one was rare & the other was well done. Only me and AngahRuz enjoyed rare steak which is more juicy and tender. The steak was very tasty and the Thai chili sauce wasn't really necessary.

Here is how I made mine:
INGREDIENTS:
500g Beef - about 1" thick
Black Pepper sauce
Olive Oil

METHOD:
1. Marinate beef with black pepper sauce (I marinated 6 hours in fridge).
2. Heat up grill pan (pan with raised ridges) with some olive oil until really hot.
3. Pour olive oil on meat & place in the grill pan.
4. Cook one side for 5 min without touching.
5. Flip & cook another 5 min.
Let it rest for 5 min with heat off.
Tips:
a. Do not overcook otherwise the meat will be tough.
b. Do not prick the meat while cooking as you will spoil the taste if doing so.
6. Slice thinly & serve with Thai chili sauce.

Instant Beef Burger


 We had Kuey Teow Wet for breakfast yesterday so today kids want something different and the mom always knows what the children like.... I used beef burgers that made in Brunei which is pure Australian beef and didn't mind paying double the price as the beef quality is good. That way I felt less guilty serving kids with junk food....
The buns are pan grilled with garlic butter then sandwich with salad, cheese slice, grilled plum tomatoes, brown sauce and mayonnaise.... Served the burger with french fries.... nyummy..... even McD cannot make better than this!

Crispy Salmon Dinner Set

 I bought whole Salmon weighted about 3 kg which can serve us whole family for two times. So here what I did with half of the Salmon...... Crispy Salmon served with Garlic Bread, Crab Potato, Baked Plum Tomatoes, Lettuce and Balsamic Sauce. Below photo has an additional item i.e. spaghetti cheese on my sons' request. We felt terribly full after the dinner... such a big portion!

Grilled Tuna Sandwich

 Breakfast this morning is still in the same theme from last last night.... tuna, salad & garlic bread....hehe. The boyz clapping their hands for this type of menu anytime whether day or night... they just love it.

Here how the grilled slices look like before adding salad:
INGREDIENTS:
Oval buns - sliced & halved
Garlic butter - see here
Tomatoes
Tuna Flakes
Mozarelle Cheese
Black Pepper
Salad & Green Olives

METHOD:
1. Spread bread with garlic butter.
Arrange tomato, tuna & cheese.
Sprinkle black pepper.

2. Toast below grill until golden brown & crispy.
Top with salad & green olives..... have a bite...!!

Tuna & Spinach Pizza



 As promised earlier on, herewith the recipe. Still using the same dough recipe that I made earlier on. As for the topping, you can use your own creativity. I came up with this topping because I wanted to clear the pantry.... The whole family enjoyed it so much and to my surprise even Patma likes it (she does not normally likes western food and she has low intake of vegetables but this time she had two jumbo slices of pizza and enjoyed the Garden Salad too).

INGREDIENTS:
500g Plain Flour
260g Water
2 tbsp Sugar
11g Instant Yeast
1/2 tsp Salt
2 tbsp Olive Oil
For topping, see below

METHOD:
1. Mix all the ingredients in a mixer with dough hook until smooth.
Knead lightly with hand & rest until it doubled up.

2. Punch the dough & roll to fill pizza pan.
(I used 32" diameter pan & had some leftover dough which I turned into french roll).
Brush surface of dough with olive oil & bake for 10 min.

3. Spread tomato sauce on top of the pizza dough.
Top with canned spinach, big onion ring, capcicum, tuna, olives & mushrooms.
Lastly, sprinkle mozarella cheese on top.

4. Bake for 15-20 min at 180C until cheese is melted & crust at the edge is golden brown.

Cheesy Garlic Bread

 There was leftover dough from pizza making last night & I baked it into a small loaf of french bread & turned it into Cheesy Garlic Bread this morning.

 These are the garlic bread (without cheese) that we had for dinner last night served with mushroom soup:

INGREDIENTS:
4 cloves Garlic - pounded
1 small bowl Butter
2 tsp Dried Parsley
Salt & Pepper (skip salt if using salted butter)

METHOD:
1. Mix all & ready to use.

2. Spread generously on french bread.
Sprinkle mozarella cheese (optional, for cheesy type).
Grill in an oven until bread surface is light brown & crispy.

Garden Salad with Balsamic Dressing


 Conscious of high daily intake of calories....? Once in a while let's turn to a healthy eating style, come join me for this simple but delicious Garden Salad with special Balsamic dressings.... for sure you will not feel like being a goat munching bunch of unflavoured vegetables...hehehe.

I had this in the women network's party prepared by Shuxian last week and it was delicious... I did not have enough but on the other hand I didn't want to overeating. So I decided to have another round and made for dinner last night....

INGREDIENTS:
Coral Lettuce
Plum Tomatoes

Olives
5 tbsp Balsamic Vinegar
Capcicum
4 cloves Garlic - chopped
3 tbsp Extra Virgin Olive Oil (EVOO)
Salt & Pepper
(Note: You can substitute with your favourite vegetables)

METHOD:
1. Heat up EVOO & stir fry garlic until golden brown.
Pour olive oil & garlic into a salad bowl.
2. Add in the rest & mix well.

For info, the Balsamic Vinegar is not just rich in taste and flavour but also good for health. Here are the health benefits that I copied from one website:

Hot Sausage Bun

My kids wanted something bread base breakfast, so here what I came up with. A very easy & fast to prepare Hot Sausage Bun and importantly very filling too.

INGREDIENTS:
Oval Buns
Butter/Margarine
Sausages
1/2 Big Onions - chopped & saute with butter
Cucumber - sliced into finger shape
Eggs - scramble with heated butter & seasoned with pepper 

METHOD:
1.  Slice buns on top to open.
Spread butter/margarine.
2. Fill with onions, cucumber, sausage & scramble egg.
3. Pipe mayonnaise, mustard & chili sauce.

Bruschetta

One of my simple breakfast..... Bruschetta served on a garlic toasted slices & White Cheese.....

INGREDIENTS:
Cherry Tomatoes - cut (ord tomatoes is also ok)
Chopped Garlic
Basil, Parseley, Salt & Pepper
Olive Oil (I used EVOO)

METHOD:
1. Heat up olive oil & saute chopped garlic until fragrant.
Add in tomatoes & the rest.

2. Served with toasted garlic/plain bread.

Prosperity Burger

Prosperity breakfast today - yummy yummy & very filling! Hope today will be a prosperous day and I can just sit back and relax, no more cooking for lunch after this sumptuous breakfast... we'll eat out...hehe!

Saw Hana making this one day & that's how the idea started. Anyway, I did not follow the recipe. I used instant beef brown sauce, added chopped onions & coarsely grounded black pepper. I served the burger with saute big onions, sliced cucumber & tomato. Alongside were potato fries and bruschetta.

Healthy Vegetable Sandwich


I love this combination of thickly sliced wholemeal bread & vegetables with no added sauce necessary. With home made bread, you can slice to the thickness that you like & I always like mine thicker than the standard shop's slices so that I can enjoy the softness & rich taste of the bread.... emmmm.... anyone.....?

Let's make vegetable sandwich: 2 pieces whole meal bread (that I made a day before), a slice of cheese, salad leaf, slices of tomato & cucumber & dashes of pepper. Butter the bread slices & sandwich the vegetables & cheese... enjoy!

Cheesy Fries


I made this yesterday for the boyz at home. Seen it at Nur's house (My Little Kitchen) few days ago and so happened I had some left over cheddar cheese in the fridge. I didn't bother to measure according to the recipe but turned-out alright. Nur used orange color cheddar cheese which turned-up more attractive than mine - see here for her version.

Here how I made my cheese dip:
1/4 block cheddar cheese (about 60g) - shredded
Fresh Milk - just enough to cover the shredded cheese
Some Mustard Powder
Some Paprika Powder

METHOD:
1. Place all ingredients in a saucepan & stir until cheese melts.
2. Pour on top of potato fries (I bought frozen fries & deep fried).
3. Piped some mayonnaise on top.

Baked Salmon

These are our dinner tonite. My two sons had no appetite for rice so it is the time to do something with the 2-feet-long salmon that been sitting in the freezer for several weeks already.

The recipe is my own creation using mango juice, instead of lemon, which is not just effective in getting rid of the fishy smell but makes it tasty & juicy too. So far, I have not found a better recipe than this one which is my family's favorite too:

INGREDIENTS:
Salmon - cut into serving size
McCormick Onion Salt
McCormick Mixed Herbs
Mango juice
Tomatoes - halved

METHOD:
Rub salmon with all ingredients (except tomatoes) & marinate for 30 minutes.
Arrange in a casserole with the remaining juice & drop few dots of butter.
Arrange tomatoes, sprinkle with onion salt & top with a slice of cheese.
Bake 200C for 20 minutes.
Serve with your preferred side dish.
