Fried Kembung in Chilli Oil

 This is my last entry before getting into Ramadhan. Just to share an instant & quick cooking with Chilli Oil that I made earlier here and here. Apart from accompanying noodles & rice, you can also use chili oil for instant cooking like what I did here. Just fry some big onion until soft, add in chilli oil & stir in fried fish ( I used Mackerel or Kembung)..... ready in just 5 minutes! Very much suitable for Sahur when you need to cook something quickly..... serve with hot rice and that's all you need!

Fish & Cheesy Wedges

 Found a bag of huge fillet (from a giant fish that I bought long time ago) in the freezer while searching for an idea for dinner. I just wanted to clear the whole lot of it and what better way than making fish & chips. Since I have a can of cheddar cheese dip, I thought replacing potato chips with cheesy wedges will please the kids better & I was right.... They were all thrilled whenever I cooked western menu but me & my hubby always prefer rice & dishes... anyway tonite we gave in to the kids.
Cheesy Wedges and Creamy Coleslaw
Parmesan Fish

Serve: 5 persons
INGREDIENTS:
5 Fish Fillet
1 Calamansi Juice
2 Eggs
2 tbsp Plain Flour
1 tbsp Corn Flour
Bread Crumbs*
4-5 tbsp Parmesan Cheese Powder* (*mix) 
Salt & Pepper

METHOD:
1. Rub fish fillet with salt & calamansi juice.
Keep aside while preparing the batter and potato wedges.
2. Beat eggs slightly & mix well with plain flour, cornflour, salt & pepper.
3. Dip fish fillet in batter & roll on breadcrumb mixture.
4. Shallow fry in a flat pan until golden one side & flip.
Lift out on kitchen paper once both sides are crispy & golden.
5. Serve along cheesy potato wedges & coleslaw.


Cheesy Potato Wedges

- Peel potatoes & cut into wedges.
- Boil until slightly soft.
- Dip boiled potatoes in batter & deep fry until golden & crispy on the outer.
(I made just a simple batter using plain flour, turmeric powder, salt, pepper & water adequately).
- Drizzle with cheddar cheese dip.

Creamy Coleslaw

BAHAN2:
5 keping Isi Ikan
1 biji Limau Kasturi - ambil jus
2 bj Telur
2 sb Tepung Gandum
1 sb Tepung Jagung
Serbuk Roti*
4-5 sb Serbuk Parmesan Cheese* (*campur) 
Garam & Serbuk Lada Hitam

CARA2:
1. Lumur ikan dgn garam & jus limau.
Ketepikan sementara menyediakan tepung goreng & kentang wedges.
2. Pukul telur sedikit & gaul sebati dgn tepung, garam & lada.
3. Celup ikan ke dlm bancuhan tepung & golekkan ke atas serbuk roti.
4. Goreng di dalm kuali leper sehingga garing & balikkan sehingga kedua2 belah garing & masak sepenuhnya.
5. Hidangkan dgn kentang wedges bekeju & salad kobis.


Kentang Wedges Berkeju

- Kopek kentang & potong wedges.
- Rebus sehingga empuk sedikit.
- Celup ke dlm tepung goreng & goreng sehingga rangup.
(Along buat tepung goreng yg simple jer: tepung gdm, serbuk kunyit, garam, lada & air secukup nya).
- Sudukan cheddar cheese dip ke atas kentang wedges semasa menghidang.

Salted Fish in Sambal (Again)

 One of my favourite salted fish is salted Shark. Cut them into tiny pieces, deep fry and add into cooked sambal..... very nice appetiser to go along other dishes.
 I've posted this dish earlier on at here but today I pasted the recipe again but in bilingual.

INGREDIENTS:
1 cup tiny cut Salted Fish
5 Shallots*
1/2 cup Chili Paste*
1cm Belachan* (*blend)
1/2 tsp Tamarind + 2-3 tbsp water
1 Large Onion - sliced
Salt & sugar


METHOD:
1. Wash & soak salted fish for a while so that it is not too salty.
Rinse & deep fry until golden colour.
Keep aside.

2. Heat up some cooking oil & stir fry blended ingredients until fragrant.
Add in tamarind juice, salt & sugar & stir fry until dry.

(Becareful not too much salt as the fish is already salty).
Add in fried salted fish & big onion & cook until well mixed and onion is soften.
Dish out.

Ikan Masin Masak Cili
Along guna ikan Yu masin dan lauk ni memang best sebagai penambah selera.

BAHAN2:
1 cwn Ikan Masin - di potong kecil
5 ulas Bwg Merah*
1/2 cwn Cili Mesin*
1cm Belacan* (*blend)
1/2 tsp Asam Jawa + 2-3 sb Air
1 biji Bwg Besar - hiris
Garam & Gula

CARA2:
1. Basuk ikan masin & di rendam sebentar supaya tidak terlalu masin.
Tapis & goreng sehingga garing.
Angkat & di ketepikan dahulu.

2. Panaskan minyak & tumis bahan2 blend* sehingga wangi.
Masukkan air asam jawa, garam & gula & kacau sehingga kering.
(Hati2 jgn letak garam berlebihan sbb ikan sudah masin)
Masukkan ikan masin & bwg besar. Masak sehingga bwg layu.
Hidangkan dgn nasi bersama lauk-pauk yg lain.

Fried Fish Roe (Telur Ikan Goreng Kunyit)

 I get very thrilled whenever I found fish roe either in the market or in fish stomach. This is one of the ways I like to cook it.

INGREDIENTS:
Fish Roe
Big Onion
Green Chili
1-2 cloves Garlic
Turmeric Powder
Salt

METHOD:
Rub fish roe with salt & turmeric powder & shallow fry until cooked.
Add in chili, onion, turmeric powder & salt.
Cook until onion is soften, stirring occasionally.
Dish out.

Stuffed Squids (Sotong Sumbat)

 Found quite big squids in the market few weeks ago but only now have time to make stuffed squids that I had been thinking about. Come and enjoy my stuffed squids...... It has some eggs inside plus the filling making it very delicious.....

INGREDIENTS:
3 big Squids
3 Garlic*
1/2" Ginger*
1 Red Chili*
2 Green Chili*
Chili Padi*
2" Turmeric Root* (* pounded) 
1 Lemongrass - bruised 
1 bowl Coconut Milk (enough to cover squids) 
Salt

FILLING:
1 Potato*
1/4 Carrots* (* cubed tiny size)
1/2 cup Shrimps - shelled & chopped 
1 Red Chili - sliced 
Salt & Pepper

METHOD:
1. Prepare filling.
Heat up few tbsp oil & stir-fry potato until soften.
Add in the rest of ingredients & stir until cooked.
Off fire & keep aside to cool slightly.
Stuff into squids and secure the open end with tooth pick.

2. Heat up few tbsp oil & stir-fry lemongrass & pounded ingredients until fragrant.
Pour in coconut milk, salt & stuffed squids.
Stir frequently until boiled & squids are cooked.


3. Serve with white rice.

Teringin nak makan sotong sumbat & terjumpa lak sotong besar kat pasar beberapa minggu lalu tapi baru sekarang ada masa nak buat. Sotong ni ada telur pulak kat dalam, campur dgn inti memang sedaaap...!

BAHAN2:
3 ekor Sotong yg agak besar
3 ulas Bwg Putih*
1/2" Halia*
1 biji Cili Merah*
2 biji Cili Hijau*
Cili Padi*
2" Kunyit Hidup* (* tumbuk) 
1 btg Serai - diketuk
1 mangkuk Santan (cukup untuk tenggelamkan sotong)
Garam

INTI SOTONG:
1 bj Kentang*
1/4 btg Karot* (* potong dadu)
1/2 cwn Udang - cincang
1 biji Cili Merah - hiris
Garam & Lada Hitam

CARA2:
1. Sediakan inti sotong.
Panaskan sedikit minyak & goreng kentang sehingga empuk.
Masukkan kesemua bhn lain & kacau sehingga masak.
Tutup api & sejukkan sedikit.
Sumbatkan ke dlm sotong & semat hijung dgn lidi / pencungkil gigi.

2. Panaskan sedikit minyak & tumis serai & bhn tumbuk sehingga wangi.
Masukkan santan, garam & sotong sumbat.
Kacau selalu sehingga menggelegak & sotong masak.

3. Hidangkan dgn nasi.

Serunding Udang Geragau

 It was shrimp (udang geragau) season in Miri last month for only few days and I bought 2 kg of it. It has been sitting in my freezer awaiting for action ever since. I was thinking to try making serunding out of it, something which I have not tasted or heard before but my creativity always goes wild...hehe. My wild imagination turned into action finally and sharing herewith with everyone. It has quite coarse texture but my hubby likes it.

INGREDIENTS:
1 kg Shrimps / Udang Geragau
1 small bowl Grated Coconut
1 small bowl / 200g Shallots*
1 clove Garlic*
20 Lemongrass*
10g Fennel Seeds*
10g Coriander Seeds* (* blended) 
1 cup Chilli Paste
1/2 tbsp Turmeric Powder
1 liter Thick Coconut Milk
Salt & Sugar

METHOD:
1. Place all ingredients, except shrimps  coconut, in a wok & let it boil.
2. Add in shrimps & coconut then stir most of the times until dry.
This may take about 1-2 hours, cooking above medium-low fire.
3. Serve with rice, glutinous rice, nasi himpit, bread, etcs.

Teringin nak experiment udang geragau buat serunding & ini lah hasil nya. Hubby Along makan dgn sagu (sagu ialah makanan kesukaan orang Melanau kat Sarawak ni). Nanti kita tunjuk kendian kita makan serunding ni dgn apa ya...

BAHAN2:
1 kg Udang Geragau
mangkuk kecil Kelapa Parut
1 mangkuk kecil / 200g Bwg Merah*
1 ulas Bwg Putih*
20 btg Serai*
10g biji Ketumbar*
10g Jintan Manis* (* blended) 
1 cwn Chilli Paste
1/2 sb Serbuk Kunyit
1 liter Santan Pekat
Garam & Gula

CARA2:
1. Letak kesemua bahan2, kecuali udg geragau & kelapa, ke dlm kuali & masak sehingga menggelegak.
2. Masukkan udg geragau & kelapa dan kacau senantiasa sehingga kering.
Ini mengambil masa 1-2 jam, masak dgn api sederhana kecil.
3. Hidangkan dgn nasi, pulut, nasi himpit, roti, dll.

Three-Flavour Steam Fish (Ikan Kukus Tiga Rasa)

 Tried a recipe taken from Ummi's house.... kids prefer the one with fried fish but hubby likes it.

INGREDIENTS:
2 pieces Fish
100ml Water
- add more if you like
2 tbs Oil
Salt
5 Shallots*
3 cloves Garlic*
3cm Young Ginger*
2 Red Chilies*
(* Chopped) 
1/2 Ginger Bud**
2 Kaffir Lime Leaves**
4 - 5 Chili Padi**
(** finely sliced) 

SAUCE:
2 tbsp Chili Paste
1
tbsp Tomato Sauce
2
tbsp Plum Sauce
2
tbsp Sugar
2 tbsp Chili Sauce
1 tbsp Lime Juice
1 tsp Sweet Soy Sauce


METHOD:
1. Rub fish with salt & marinate for 10 min.

Place it on a greased plate & add water.
Steam until cooked (abut 10-15min).
 
2. Heat up oil in a wok & stir fry chopped ingredinets for 1 min.
Add in sauce ingredients & stir well until boiled.
Add in sliced ingredients, gravy from steamed fish & salt.

Cook until thicken & pour onto steamed fish.
 
3. Serve right away with white rice.

2 camb Minyak
Garam
5 ulas Bawang Merah*
3 ulas Bawang Putih*
3cm Halia Muda*
2 biji Cili Merah*
(* Cincang halus) 
1/2 kuntum Bunga Kantan**
2 helai Daun Limau Purut**
4 - 5 biji Cili Padi**
(** Hiris halus) 

Bahan2 sos:
2 sb Cili Kisar
1 sb Sos Tomato
2 sb Sos Plum
2 sb Gula
2 sb Sos Cili
1 sb Jus Limau Nipis/Kasturi
1 st Kicap Manis

CARA2:
1. Lumurkan ikan dengan garam dan biarkan selama 10 minit.
Letakkan ikan di dalam pinggan yang dilengser dengan sedikit minyak dan air.
Kukus hingga ikan masak.
 
2. Sementara itu, panaskan minyak & tumiskan bahan2 cincang selama 1 minit.
Masukkan bahan-bahan sos dan kacau rata.
Bila mendidih, masukkan bahan-bahan hiris, air kukusan ikan dan garam.
Masak hinga kuah pekat sedikit dan tuangkan ke atas ikan tadi.
 
3. Makanlah bersama nasi putih dan ulam-ulaman.

Asam Pedas Sardine

 Once in a while is nice to cook canned sardine dish. This time let's cook sardine in Asam Pedas... delicious! Refer to my Asam Pedas recipe in here and simply replace the fresh fish with canned sardines. I also added some Daun Kesum.

Cuba lah masak Asam Pedas guna sardin tin, memang sangat sedap. Kalau nak resepi, boleh klik kat sini tapi gantikan ikan segar dengan sardin. Along tambah daun kesum untuk lebih harum.

Thai Sweet & Sour Fish (Ikan Masak Masam Manis ala Thai)

 My SIL sent some fresh Belanak from kampung which is my hubby's favourite fish (very rarely found in Miri). She packed it in a cool box and put it in an express bus first thing in the morning which reached Miri by end of the day. As my hubby likes it simply deep fried, I made some sweet sour sauce with Tom Yam flavour to accompany the fried fish.... whole plate of dish was wiped cleaned after the dinner.

INGREDIENTS:
Whole Belanak Fish
3 cloves Garlic*
1 slice Ginger* (* pounded) 
1 Lemongrass - bruised 
2 tbsp Chili Paste
1 tbsp Tom Yum Paste
2 tbsp Tomato Sauce
2 tbsp Chili Sauce
1 tsp Plum Sauce
3 Kaffir Lime Leaves - sliced thinly 
Mixed Veg - Cauliflower, Carrot, Big Onion, Tomato, Green Chili
Salt & Sugar

METHOD:
1. Rub fish with salt & turmeric powder & deep fry until cooked.
Place fish in a serving plate.
2. Heat up 2 tbsp oil & stir fry pounded ingredients & lemongrass.
Add in chili paste & stir for a minute.
Add in all type of sauce and some water & let it boiled.
Add in salt, sugar & vegetables.
Pour onto fried fish once cooked.
3. Serve immediately and with rice.


BAHASA MALAYSIA VERSION
Masakan Ikan Belanak Masam Manis dengan perisa Tom Yam. Memang enak sangat...

BAHAN2:
Ikan Belanak
3 ulas Bwg Putih*
1 hiris Halia* (* tumbuk) 
1 btg Serai - tumbuk
2 sb Cili Mesin
1 sb Pes Tom Yam
2 sb Tomato Sauce
2 sb Chili Sauce
1 sk Plum Sauce
3 helai Daun Limau Purut - hiris nipis
Sayur Campur - Bunga Kobis, Karot, Bwg Besar, Tomato, Cili Hijau
Garam & Gula

CARA2:
1. Lumur ikan dgn garam & serbuk kunyit. Goreng sehingga masak.
Letak ikan ke dlm pinggan hidangan.
2. Panaskan 2 sb minyak & tumis bhn tumbuk & serai sehingga wangi.
Masukkan pes cili & kacau lebih kurang seminit.
Masukkan semua jenis sos  dan air secukup nya.
Didihkan & masukkan garam, gula & sayur.
Tuangkan ke atas ikan goreng tadi.
3. Hidangkan segera dgn nasi putih yg panas.

Tongkol Gulai Gayung

 Gulai Gayung is a very mild version of curry without using any curry powder. The best fish to cook into this gravy is Tongkol or Kembung. This is my favourite dish from Pantai Timur.

INGREDIENTS:
1/2kg Tongkol Fish
4 tbsp Chili Paste
5 Shallots*
1 clove garlic*
1" Galangal*
1 Candle nut*
2 tbsp Coriander Seeds*
1 tsp Cumin Seeds* (* blend)
1 Lemongrass - bruised 
1 bowl Coconut Milk
1 tbsp Kerisik
1 Tamarind piece
Salt

METHOD:
Heat up some oil & stir fry blended ingredients & lemongrass until fragrant.
Add in oconut milk, kerisik, tamarind piece, salt; stir until boil.
Add in fish and stir occasionally until done.

Gulai Gayung ialah masakan Pantai Timur yg sedap di gandingkan dhn nasi dagang ataupun nasi putih biasa.

1. Panaskan sesenduk minyak & tumis bhn2 blend & serai sehingga wangi.
Masukkan santan, kerisik, asam keping & garam; kacau sehingga menggelegak.
Masukkan ikan & kacau sekali-sekala sehingga masak.

Asam Pedas Fish

 I missed home cooking so much after the Europe tour....LOL. The food in Europe were fabulous (I'll share the foods we had in Europe soon) but being the typical Malay, I longed for rice and dishes so much. So, as soon as my head was clear, I started cooking again and ya Allah this Asam Pedas is heaven....hahaha (bunyi orang kemaruk...hehehe).
I've posted several Asam Pedas recipes before and this one is slightly varied.

INGREDIENTS:
More/Less 700g Fish
5 Shallots*
2 cloves Garlic*
1/2" Ginger*
2cm Belachan*
2" Turmeric Root*
1 tsp Coriander Seeds*
1 tsp Fennels*
1 tsp Cumin* (* blend with some water) 
1 Lemongras - bruised 
6 tbsp Chili Paste
1 tbsp Tamarind Paste - mix into 1 bowl of water
1 Ginger Flower (I used dried one) 
2 Tomatoes - cut 
2 tsp Sugar
Salt

METHOD:
1. Heat up 1 scoop of oil and stir fry blended ingredients & lemongrass until fragrant.
Add in chili paste & continue stir fry until fragrant.
Add in tamarind juice, ginger flower, sugar & salt and let it boil.
Add in fish & tomato.
Cook until fish is done.

2. Serve with omelet, veg and white rice.

Ini lauk orang tengah kemaruk nak makan nasi....hehehe

BAHAN2:
+/- 700g Ikan Isi
5 ulas Bwg Merah*
2 ulas Bwg Putih*
1/2" Halia*
2cm Belacan*
2" Kunyit Hidup*
1 st Biji Ketumbar*
1 st Biji Jintan Manis*
1 st Biji Jintan Putih* (* blend dgn sedikit air) 
1 btg Serai - ketuk
6 sb Pes Cili
1 sb Asam Jawa - perah dlm 1 mangkuk air
1 kuntum Bunga Kantan (Along guna yg kering) 
2 biji Tomato - potong
2 st Gula
Garam

CARA2:
1. Panaskan 1 senduk minyak & tumis bhn blend & serai sehingga wangi.
Masukkan pes cili & tumis lagi sehingga wangi.
Masukkan air asam jawa, gula & garam dan biar menggelegak.
Masukkan ikan & tomato.
Biar sehingga ikan masak sempurna..

2. Hidangkan dgn telur dadar, sayur & nasi putih.

Grilled Turmeric Fish (Ikan Panggang Kunyit)

I had a big slice of tuna and turned it into this lovely dish. I like playing with different aroma but this time was simply plainly turmeric fragrant and purposely did not add in any turmeric leaf or lime leaf but you can add them if you like.

INGREDIENTS:
1 slice Fish Fillet ( I used Tuna)
1 Lime
1 Lemongrass - cut 
2" Turmeric Root*
4 Shallots*
1 clove Garlic*
1/2" Ginger*
1 Candlenut*
2 Green Chilies*
Some Chili Padi*
1/2 packet Santan Powder*
Salt & Sugar* (* blended)

METHOD:
1. Cut fish into small pieces & rub with salt, lime juice & lemongrass.
2. Blend ingredients marked* with some water.
3. Lay a piece of banana leaf on a griddle & pour blended sauce.
Cook above medium fire until done.
BAHASA MALAYSIA VERSION
Ikan Panggang Kunyit
Sedap ikan panggang ni rasa cam ikan percik pun ada, lemak2 pedas & wangi.

BAHAN2:
1 keping Isi Ikan ( Along guna Ikan Tuna)
1 biji Limau Kasturi
1 btg Serai - potong2
2" Kunyit Hidup*
4 uls Bwg Merah*
1 ulas Bwg Putih*
1/2" Halia*
1 biji Buah Keras*
2 bj Cili Hijau*
Cili Padi*
1/2 peket Serbuk Santan*
Garam & Gula* (* blend dgn sedikit air)

METHOD:
1. Potong ikan kpd kiub2 kecil & lumurkan garam, jus limau & serai.
2. Bentang sekeping daun pisang ke atas kuali leper.
3. Tuangkan bhn yg di blend & masak dgn api sederhana.

Baked Wrapped Fish (Ikan Pais)

 This is kampung style dish and my favourite. Both my mother & MIL are very good in making this with their own different version. Here is my own version....

INGREDIENTS:
Fish
- cut to small pieces (size of half Kembung) 
3 Shallots*
1 clove Garlic*
1 Lemongrass*
1-2 Red Chili*
Few Bird-eye Chili*

2" Turmeric Root*
2 Candle Nuts*Some fresh grated Coconut* (* pounded)
1 Turmeric leaf**
Few Cengkil Leaves**
(** sliced finely) 
4 Kafir Lime Leaves - torn
Salt, sugar
Banana Leaf, Cengkil Leaves

Note: Can replace Cengkil Leaves with Tapioca Leaves

METHOD:
1. Mix fish with all the ingredients.

2. Lay some Cengkil Leaves on a piece of banana leaf.

Place fish on it & wrapped. Secure ends with tooth picks.
Place on a griddle &
flip occasionally until cook.

Ikan
- potong (contoh saiz sebesar separuh ikan Kembung) 
3 ulas Bwg Merah*
1
ulas Bwg Putih*
1 btg Serai*
1-2 Cili Merah*
Cili Padi*
2" Kunyit Hidup*
2 biji Buah Keras*Sedikit Kelapa Parut* (* tumbuk)
1 helai Daun Kunyit**
Beberapa helai Daun Cengkil**
(** sliced finely)
4 helai Daun Limau Purut - koyak2
Garam, Gula
Daun Pisang, Daun Cengkil
Nota: Kalau takda Daun Cengkil, boleh gantikan dgn Pucuk Ubikayu

CARA2:
1. Gaul ikan dgn kesemua bhn2.

2. Letakkan beberapa helai daun Cengkil ke atas sekeping daun pisang.
Letakkan ikan yg di gaul dgn bumbu & bungkus.
Semat hujung bungkusan dgn pencungkil lidi.
Masak di atas kuali lipir & balik2kan selalu.

Crabs & Pineapple in Cili Padi Coconut Broth (Ketam Masak Lemak Cili Padi)

 I'm in a mood for Masak Lemak Cili Padi lately. Few days ago I posted Tempe Masak Lemak and now Crab & Pineapple Masak Lemak. As usual, I used skimmed coconut milk so less creamy than the typical Perakian's version (actually the creamier the more delicious but controlling my intake for health reason).

I've been thinking about crabs lately but sea crabs are rare here and only found baby size crabs....

INGREDIENTS:
1/2 kg Crabs
1/2 Pineapple - sliced 
Some Cili Padi*
1 Green Chili *
4 Shallots*
2" Turmeric Root* (* pounded) 
1 Turmeric Leaf
1/2 wok of Coconut Milk (enough to cover crabs & pineapple)
Salt

METHOD:
1. Place all ingredients in a deep wok & let it boil while stirring all the time.
2. Cook until crabs are done.
3. Serve with white rice.

Ketam Masak Lemak Cili Padi

1/2 kg Ketam
1/2 biji Nenas - hiris2
Cili Padi*
1 bj Cili Hijau *
4 bj bwg Merah*
2" Kunyit Hidup* (* tumbuk)
1 helai Daun Kunyit
1/2 kuali Santan - cukup utk tenggelamkan ketam & nenas
Garam

CARA2:
1. Bubuh kesemua bhn ke dlm kuali & masak sehingga menggelegak sambil di kacau selalu supaya tidak meruap.
2. Biar sehingga isi ketam masak sepenuh nya.
3. Hidangkan dgn nasi putih.
