Steamed Omelet (Telur Dadar Kukus)

 Here is something I've created from nowhere.... just wanted to clear some bean curd actually. Simple and can be ready in short time.  I should use smaller tin next time because my omelet is just too thin. I made this many days ago but was too busy to update the blog & hopefully I still remember all the ingredients precisely.

INGREDIENTS:
3 Eggs
1 Bean Curd - cut into small cubes
1 Sausage - chopped 
1 Red Chili - sliced 
1/2 Big Onion - chopped 
Some chopped Spring Onions & Chinese Celery
Salt & Pepper

METHOD:
1. Beat eggs slightly & mix with the rest of ingredients.
2. Pour into a greased tin.
3. Steam for 10-15 minutes until cooked.
4. Sprinkled with fried onions when served.

BAHASA MALAYSIA VERSION
Kali ni Along buat telur dadar kukus yg di campur dgn tahu & sosej. Silakan cuba kalau nak tahu rasa nya.... Resipi main campak2 ikut sempat jer...hehe

BAHAN2:
3 bj Telur
1 keping Tahu - potong kiub kecil
1 biji Sosej - cincang
1 biji Cili Merah - hiris nipis
1/2 bj Bwg Besar - cincang
Daun Bwg & Daun Sup - cincang
Garam & Serbuk Lada Hitam

CARA2:
1. Pukul sedikit  telur & campur kesemua bhn2 lain.
2.Tuangkan ke dlm tin yg telah di minyakkan.
3. Kukus 10-15 min sehingga masak.
4. Tabur bawang goreng sewaktu di hidangkan.

The omelet is ready to be steamed....

Smooth Loofah & Egg Soup (Sayur Labu Air & Telur)

 Something simple but we in the house like it......

INGREDIENTS:
1/2 Smooth Loofah - peel & cut 
1 Red Chili*
2 Shallots*
1 clove Garlic* (* sliced) 
6 Fish Balls - sliced 
3 Eggs
Salt & Pepper

METHOD:
1. Heat up 2 tbsp oil & stir fry sliced ingredients* & fish balls until fragrant.
Add 3/4 liter water, salt & pepper & let it boiled.
Add in loofah & cook until soften.
Break in eggs & do not stir until they are cooked.

2. Serve immediately with rice and preferably also Sambal Belachan.


BAHASA MALAYSIA VERSION
Sayur Labu Air & Telur
Masakan harian yg mudah tapi sedap. Best makan dgn nasi putih, boleh di hirup2.

BAHAN2:
1/2 biji Labu Air - kupas & potong kecil
1 biji Cili Merah*
2 ulas Bwg Merah*
1 ulas Bwg Putih* (* hiris) 
6 biji Fish Balls - hiris
3 biji Telur
Garam & Serbuk Lada Hitam

CARA2:
1. Panaskan 2 sb minyak & tumis bhn2 yg dihiris* & fish ball sehingga layu.Masukkan 3/4l air, garam & serbuk lada, biarkan menggelegak.
Masukkan sayur labu & masak sehingga agak lembut.
Pecahkan telur ke dlm masakan sayur & jangan kacau sehingga telur masak.

2. Hidangkan semsa masih panas dgn nasi. Enak jika ada Sambal Belacan.

Sambal Scrambled Eggs

 This is nice to go with rice as side dish or sandwich it between two pieces of bread or eat it with Roti Canai...
You can adjust the amount of chili to suit your liking.... mine is very mild as I used the type of dried chili that is less stinging hot.

INGREDIENTS:
2 Eggs
2 Shallots*
1 clove Garlic*
1/2cm Belachan*
1 tbsp Ikan Bilis* (* pounded)
3 tbsp Chili Paste
1/2 Big Onion - sliced
Salt

METHOD:
Heat up 4 tbsp oil & fry pounded ingredients, chili paste & salt until fragrant.
Add in big onion & continue to stir until it turns translucent.
Break in eggs & stir until it turns into scrambled.
Dish out!

Omelet with Olives


I have a big jar of olives, so this is one of the ways to consume it..... a nice combination & my children like it.

INGREDIENTS:
3 Eggs
1 Red Chili
1 Shallots
5 tbsp Fresh Milk
Olives - the more the tastier
Salt & Pepper

METHOD:
1. Beat eggs and add in the rest of ingredients.
2. Heat up 2-3 tbsp of oil in a flat pan.
3. Pour in the egg mixture & when the bottom is cooked, flip to cook both sides.....ready!

Gulai Lemak Telur Masin (Salted Egg in Green Coconut Broth)


 I had lunch at my  good friend's house few weeks ago whereby she invited her friend (Kak Nor) to cook this special dish. This dish typically using fresh duck eggs (and my mum's cook this deliciously) but you will never find duck eggs in Miri hence she substituted it with salted eggs and it turned out fabulous...! However, make sure the salted eggs are not too salty and the mild type will be great.

I tried making it again and managed to buy some salted eggs from the Pasar Malam (night market) which are imported from KL. It is more expensive (90cent each) but I was told that they are less salty which turned out to be true. My whole family enjoyed this dish very much.... My youngest son asked me why I called it salted egg because he said it is not salty at all. I guess the salt must be absorbed into the gravy. The big difference is the egg yolks which is a lot tastier than the fresh eggs...! For those who never tried this, it will be a new discovery for you....

INGREDIENTS:
4 Salted Eggs
4 Shallots*
Some Chili Padi*
1 Green Chili*
2" Fresh Turmeric* (* pounded)
1 bowl Thick Coconut Milk
1 Turmeric Leaf
1 Lemongrass - bruised 
1 Dried Tamarind
Salt


METHOD:
1. Place all ingredients, except eggs, in a pot/wok & let it boil while stirring most of the times to prevent the coconut milk from curdling.
2. Poached eggs in it & do not stir until the eggs are done to avoid from breaking.
3. Serve with white rice....ummmh!

Shabsuka

This dish can go well with roti, bread or rice....

INGREDIENTS:
500g minced beef
3 tbsp chili paste
3 tbsp minced garlics
2 tbsp ginger - minced
4 tbsp curry powder - HomeKreation: I used only 1 tbsp
1 big onion, diced
1 tomato, diced
1 cup, mix vegetables
1 can medium-size tomato puree
4 tbsp tomato sauce
1 / 2 -1 tbsp sugar
1-2 cups of water
Salt

TOPPING:
2 big onions, diced
2 Tomatoes, diced
some coriander leaves or chinese celery
1-2 red chilies, sliced
1-2 green chilies, sliced
2 tbsp fried shallots (optional)
4 Eggs

METHOD:
1. Mix minced beef garlics, ginger, and curry powder. Let it rest for at least 20 minutes.

2. Heat oil in wok and saute onions till soft.
Add in chili paste and cook till oil surfaced.
Add in marinated beef and stir well.
Add in 1-2 cups of water.
When beef has reached 3 / 4 cooked, add in tomato puree, tomato sauce, mixed vegetables and diced Tomatoes.
Stir well and add in salt & sugar to taste.
Let it simmer for a while & dish out.
The mixture shouldn't be too thick or too thin.

3. Put the beef in a baking dish and level it.
Sprinkle all the topping ingredients.
Make holes & break in eggs.
Bake at 180C degrees for 15 minutes or at least till the eggs are almost cooked.
Serve hot with white toasted soft bread or toasted french loaves.

Omelet with Mayonnaise

Tried this simple idea shared by Nor (Tganu).... fluffy & nice...

TELUR DADAR BERMAYONIS:
3 bj telur
2- 3 sudu besar mayonis
1 labu bawang besar ~ dipotong dadu
2 bj cili merah ~ dibelah dua dan hiris
daun saderi ~ dihiris
sedikit garam
sedikit minyak

Masukkan minyak ke dalam frying pan dan panaskan.
Pecahkan telur ke dalam sebuah mangkuk dan masukkan mayonis.
Pukul dgn garfu hingga sebati.
Masukkan kesemua bahan2 lain dan gaul lg hingga sebati.
Tuangkan adunan telur dan goreng hingga telur dadar masak.
Angkat dan hidangkan.

Translation & slight modification:
INGREDIENTS:
3 Eggs
2-3 tbsp Mayonnaise
1/2 Big Onion*
1 Red Chili* (* sliced thinly)
A pinch of Salt

METHOD:
1. Mix all ingredients & beat slightly with fork.
2. Heat up 1 tbsp oil in a flat pan.
Pour egg mixture & cook above small fire.
Flip one time to cook the other side.
3. Serve!

Hard-boiled Egg Sambal

As shown earlier, this was cooked to accompany Nasi Lemak for our breakfast this morning.

INGREDIENTS:
4 Hard-boiled eggs - shelled & sliced the surface (not too deep)
4 Shallots*
1/2 small bowl Chili Paste*
1 cm Belacan* (* blend together)
1 tsp Tamarind paste - mix with some water
1/2 small bowl of Santan
1 Big Onion - sliced 
Salt & Sugar


METHOD:
Heat up some oil & add in blended ingredients.
Stir fry until fragrant.
Add in the tamarind juice, santan, big onion, salt & sugar.
Boil & add in egg.
Boil a while longer to ensure sambal absorbed by the egg.

Shaped Poached Eggs

We had simple breakfast in the recent weekend (late posting due to blog system problem). For those who like to try this, grease the mould & drop a tsp of butter in the middle of the mould before poaching egg into it. This way, you can unmould it easily once the egg is cooked.

Minced Beed Wrapped in Omelet

This is supposed to be an omelet parcel but my pan is not big enough. Hence I simply topped the miced beef with the omelet like the above picture.

INGREDIENTS:
4 Eggs
1 cup of Minced Beef
2 cloves Garlic*
1" Ginger* (*pounded)
1 small Big Onion - chopped
Some Chilli Padi & Red Chilli - sliced
1 Tomato - chopped
Some Mixed Veg
2 tbsp Oyster Sauce
Black Pepper powder
Salt
Water

METHOD:
1. Beat eggs with fork & season with salt & pepper.
Fry in a flat pan to make a thin omelet.

2.Heat up some oil & fry pounded ingredients.
Add in chopped onion & chillies and fry for a while.
Add in the rest of ingredients.
Add some water to make it juicy.

2. Wrap cooked minced beef in a omelet like a parcel or just top the omelet like I did above.
Serve hot with rice.

Egg, Pineapple, Potato & Salted Fish Curry

This recipe is created based on my wild appetite and what available in the kitchen. I've been keeping the salted fish from my mum for quite sometime and it is time to dispose it into the cooking pot. I cannot find "Ikan Talang masin" (name of the salted fish) in Miri, so it is kind of precious stock & cook only when the craving is high.

INGREDIENTS:
4 boiled Eggs
½ Pineapple - peeled & sliced
1 Potato - peeled & cubed
Some Salted Fish (Ikan Talang is the best)
3 tbsp Curry Powder (I used curry powder for cooking beef instead of for fish)
3 Shallots - sliced
½ pot Coconut Milk
1 each Cinnamon stick*, Star Anise*, Cardamon* & few Cloves*

METHOD:
1. Place coconut milk & curry powder in a pot & boil.
Add in potato & cook until half cooked.
Add in pineapple, salted fish & cook for 5-10 minutes.
Adding salt may not be necessary but check to taste.

2. In a small pan, heat up 2 tbsp oil & fry sliced onion & spices* until onion is golden.
Pour the whole thing into the cooked curry.

3. Serve with rice.
