Fish Head Masak Asam Pedas


 The head of the huge Fan Fish that I've got from Mal was cooked for our dinner just now to supplement the Kampung Style Fried Fish. Superb dish given the fish is still sweet from its freshness and with the touch of well balanced taste Asam Pedas... everyone in the house truely had an enjoyable dinner....nyum-nyum...!

INGREDIENTS:
1 big Fish Head
1 Lemongrass - bruised
1/2 Big Onion*
5 Shallots*
2 cloves Garlic*
1/2" Ginger*
1 tsp Black Pepper*
1/2" Belachan* 
2" Fresh Turmeric* (* blended) 
1 cup Chili Paste
1 Tomato - chopped
1/2 cup Tamarind Juice
1 piece Dried Tamarind
Salt & Sugar

METHOD:
1.Heat up 1/2 cup oil & fry lemongrass, chili paste & blended ingredients until fragrant.
Add in chopped tomato, tamarind juice, tamarind piece, salt & sugar.
Add in fish & cover until fish is cooked.

2. Serve with white rice.
