Black Glutinous Serimuka (Serimuka Pulut Hitam)

 I boiled the whole packet of the black glutinous rice & it filled up the pot to almost full level and it was too much for Bubur Pulut Hitam that I posted earlier. Therefore I decided to turn half of it into this Black Glutinous Serimuka and to my surprise it is so very delicious.... it is awesome with very nice texture and fragrant.

The black glutinous rice is not the same texture with the white one which is sticky but the black one has loose grains even after cooked and it has special fragrant which I like very much.
Here is how I transformed it into Serimuka kuih.....

(Makes 8" round)
INGREDIENTS:
1 cup cooked Glutinous Rice (i.e. boiled until cooked & water dried up) 
1/2 cup Thin Coconut Milk*
A pinch Salt* (* mixed)

TOPPING:
2 Eggs
100g Sugar
40g Flour
175ml Thick Coconut Milk
1 tbsp Pandan Paste


METHOD:
1. Place cooked glutinous rice & coconut milk in a pan.
Steam for 30 minutes.
Pressed until it become firmly padded layer.

2. Mix the topping ingredients until smooth.
Pour over the glutinous rice layer & cover with aluminium foil.
Steam for 30 min.

3. Cool completely before slicing.
