Bingka Pisang II (Banana Bingka)
I was tempting to try another version of Bingka Pisang that I saw at MR. It is quite a different flavour than the first version I tried earlier as this one uses palm sugar, hence dark colour.

(Makes 7" square)
INGREDIENTS:
2 cups mashed Banana
1/2 cup Palm Sugar
2 Eggs
100ml thick Coconut Milk
A bit Salt
VE
1 tbs Butter
1-1 1/2 cup Flour (HomeKreation: I used 1 1/4cups)
2 Bananas - cut into chunkies
METHOD:
1. Mix all until well mixed.
(HomeKreation: I did not mashed the banana but used food processor to mix all & add flour & chunky banana last).
2. Grease tin & heat in oven for 10 min.
Place a piece of greased banana leaf & pour in batter.
Bake 180C for 30 min until top is brown.
3. Cool completely before slicing.
