Banana Bread & Banana Muffins


This is a fabulous recipe producing moist & tasty  banana cake (although it is called bread, but texture is more like cakes). It is so easy to make that you do not need a machine and can be prepared in 10 minutes. I made double batches and turned one portion into muffins and it was just great!

I hand-copied the recipe and hence not sure the source.

(Produces one 4"x8" loaf or 24 petit muffins)
INGREDIENTS:
4 Riped Bananas - mashed
1/3 cup Melted Butter
3/4 cup Sugar (I used brown sugar) 
1 Egg - beaten slightly with fork
1 tsp Essence Vanilla
1 tsp Baking Soda
A pinch Salt
1 1/2 cup Flour

METHOD:
1. Mix butter & banana with a spoon.
Add in sugar, beaten egg, EV, salt & BS while keep on stirring between each addition.
Finally fold in flour until just mixed.

2. Pour into greased loaf pan 4"x8".
Bake at 175C for 50 minutes (15 minutes for muffins).
